Green Smoothie



Only a couple of days before St. Patrick’s Day and we’re kind of sticking to our holiday theme and we’re going to look at healthy green smoothie recipes for this week’s post. As you remember, we did a heart healthy food list for Valentine’s Day.

Green smoothies are an ever popular trend. Some are very simple and some have lots of ingredients in them but they all are super healthy. Take a look and see our green smoothie guide that can help you create a drink to feel healthy and to help celebrate St. Patrick’s Day!

Simple Green Smoothie:

So a green smoothie has a basic outline. You want to add milk/liquid, greens, fruit, protein, and seeds. If you’re making a big batch of green smoothie, follow this rule, 2 cups of greens, 2 cups of liquids, 3 cups of fruit plus whatever add ons you want.

First of all, a green smoothie wouldn’t be green without the greens so some possible greens that you can use are...spinach, kale, lettuce, Swiss chard, bok choy, collards, dandelion, carrot top, celery, or beet greens. Feel free to use just one kind of green or mix it up and use a couple different types.


Next you’ll need to choose a liquid to add to the smoothie. You can use water, but for an extra bit of flavour try... dairy milk (1%, 2%, skim), soy milk, almond milk, coconut water, cashew milk, rice milk, oat milk, coconut milk, or cold brewed green tea.


Now add some fruit. Frozen bananas are always good to use but also try adding in some other fruit as well. Good fruit to add to your smoothie are mangos, pineapple, berries, peaches avocados, oranges, grapefruits, pears, apples, and grapes.


Finally add in some extras if you want. Some examples of extras are... your favourite protein powder, matcha green tea powder, flax, quinoa, chia seeds, honey, and other seeds.


Here is a recipe for a small batch of green smoothie...


1 ½ cups of milk (you choose what kind)
2 cups of frozen spinach
1 frozen banana
1 cup of fruit, your choice (good ideas are...mango, pineapple, berries, peaches, citrus fruit, green apple)
A scoop of your favourite protein powder

Blend all the ingredients together and drink. You can freeze this smoothie in individual containers so if you’re in a hurry you can pull it out and let it defrost in the morning.

Heart Healthy Food



Valentine’s Day is a day away. Such a happy week and day! We’re doing our last Valentine’s post and we’re taking a little different approach. We’re looking at heart healthy foods. Oh, and we haven’t forgotten or left out our Oscar Dress card, we’re gonna do up a card and our top 10 list of dresses next week so hold tight!


We usually do the typical Valentine post, heart crafts and sweet treats but today we’re going to delve into some foods that support heart health. Literal hearts!

Top Heart Heathy Foods:



1.      Leafy Greens – They a great source of vitamin k which helps with promoting proper blood clotting and to help with good artery function. Some include, spinach, kale, and collard greens which are full of minerals and vitamins and antioxidants.

2.      Whole Grains – They are high in fiber which can help reduce bad cholesterol. Common whole grains are quinoa, oats, rye, brown rice, and barley.

3.      Berries – Are also high in antioxidants and help with controlling the bad cholesterol. Blueberries in particular help improve cells that promote blood clotting. Berries that are good to have are strawberries, blueberries, blackberries, and raspberries.

4.      Avocados – Are high in monounsaturated fats which help lower cholesterol levels and lower the risk of heart disease. They are considered a healthy fat and are also high in potassium.

5.      Beans- Beans can reduce the levels of blood triglycerides and bad LDL cholesterol. They can also help reduce blood pressure and inflammation which are linked to heart disease.
6.      Dark Chocolate – Yum! It is rich in antioxidants and flavonoids and can help lower the risk of heart disease. Make sure to have a high quality of dark chocolate though with at least 70% of cocoa.
7.      Tomatoes – They have lots and lots of lycopene that has powerful antioxidant properties which can neutralize harmful free radicals that can lead to inflammation and heart disease.

8.      Garlic – It contains allicin which has therapeutic effects. It can help reduce platelet buildup that can lead to strokes and blood clots.

9.      Olive Oil – Again it is loaded with antioxidants that can relieve inflammation and decrease the risk of chronic disease. The monounsaturated fats in it helps with heart health.

10.  Green Tea – It has a lot of polyphenols catechins which can prevent cell damage and improve heart health. It can also decrease blood pressure and lower cholesterol.

Dive In - Dip Recipes



Another week has flown by and now it’s time for another week of our Summer theme posts. This week the shade that we chose is a dark navy metallic shade called “Dive In.” We automatically thought about dips when we heard this name, food dips, not dips in the pool, so we went on the hunt for recipes that sounded super yummy and that we needed to try and we found some. One is savoury (a spinach dip) and one is sweet (a cannoli dip). So take a look below and see what we created...

If you’re craving something sweet...try this cannoli dip recipe.

Sometimes you just need a little spoonful of sweetness to get you through the day/hour so a dip like this would be perfect. Canollis are something that I have always wanted to try and make but there’s a lot of work to go into making them. This dip is the perfect alternative.

You just need 1 cup of ricotta (dry and drain it if you can as we didn’t and it made the dip a bit watery), 1 room temperature brick of cream cheese (8 oz.), 1 cup of powdered sugar, 1 tsp. of vanilla, and 2/3 cup of chocolate chips (mini or regular both work).

Whip the cheeses and the sugar until smooth. Then add the vanilla in and whip for about 30 seconds.


Lastly add the chocolate chips and give a good stir.


Allow your dip to get a bit cooler in the fridge.

While it’s cooling, chop up some fresh fruit. We used pineapple and strawberries but you experiment with other fruits and berries too. We also broke up some waffle and sugar cones to dip as well.


If you’re in the need of a savoury treat...you can give this spinach dip a go. This one would be a perfect addition to a potluck or family dinner as a starter or in our case it was a perfect addition to games night.

For the dip you will need...
8oz. brick of cream cheese
1/4 cup of mayonnaise
2 cups of uncooked spinach
1 tsp. of onion powder
1/2 tsp. of garlic powder
A sprinkle of ground pepper
1/3 cup of parmesan cheese
1/2 cup of Monterey Jack cheese

Preheat the oven to 350 degrees.

Boil your 2 cups of spinach and set aside.


Heat the cream cheese in the microwave for about a minute to soften. Keep an eye on it.


We combined and mixed our dip with a mixer but you can do it by hand instead. Combine the cream cheese, spinach, mayonnaise, onion and garlic powder, grated cheeses, and pepper. Mix well.



Bake in a small casserole dish for 10 minutes.

When it comes out of the over, give it a good stir and serve immediately.


When it came to dipping we used a fresh French loaf and tortilla chips but you can also dip veggies or pita chips. You can also use the dip on burger, sandwiches, crackers, in wraps, and on meat.

Wonton Wrapper Raviolis



As we ease into a New Year, we like to throw in a few miscellaneous blog posts of things that we find interesting and want to try out but they may not fit into our themes throughout the year.

First up...easy wonton ravioli. This is something that we wanted to try out for a long time. We actually wanted to make some ravioli at home that was quick and easy so we first tried out fresh store bought lasagna sheets but they were too thick and stiff and didn’t work out at all. Our next plan/idea was to get some wonton wrappers and fill them and make ravioli. These worked out much better. Take a look below to see how made a yummy batch of ravioli.


First of all you’ll want to make a filling. We chose a ricotta cheese and spinach filling. For this you will need ricotta cheese, spinach, olive oil, garlic, eggs, parmesan cheese, and salt and pepper. I cooked up about 10 cups of fresh spinach (yes that seems like a lot but it cooks down so so much) along with 3 cloves of chopped garlic and a drizzle of olive oil. Cook until dark green and until the spinach goes down. 


In a bowl, add in 2 cups of ricotta cheese, 1/3 cup of parmesan cheese, 1 egg, salt and pepper and the spinach. Mix well and refrigerate until ready to use.  



After the filling is made, you can whip out your wonton wrappers and start filling. Either the square or rounds ones will work. We are making slightly larger raviolis so that we can use the entire wrapper without cutting off scrap bits. They are also much thinner than your average ravioli so it’s fine that they are a bit bigger.

Grab a bowl of warm water and put it nearby as you will need to use this to close the ravioli. You’ll also want some baking sheets to place the raviolis on as you wrap them.

Place a dollop of filling in the centre of the wrapper. You don’t want too much as it may split open so a little goes a long way.

Use your finger to put a light boarder of water around the edges of the wrapper.


Fold in half and pinch the sides together.


Place it on a baking sheet and then continue to make more. We were feeding a lot so we made a lot! You can make as many as you want. I did try making some and put them in the fridge overnight. That wasn’t the best idea as they stuck together and stuck to the container and turned really soft. It was a disaster! It’s just best to make them as you need them.


Get a large pot of water boiling. Once it’s boiling, drop about 6 of the raviolis in and let them cook for about 3 minutes. Remove with a slotted spoon and place on a parchment lined baking sheet in the oven. I put the oven on the warm and hold setting. Continue cooking the rest of the raviolis.



Next, make your sauce. We kept it real simple and just melted some butter in a pan along with some fresh sage and then tossed in the raviolis. I would say just eye how much of each you use. I needed a lot of sauce so I used extra butter and sage. We were so excited to make this and hungry that we forgot to take some pictures along the way! Sorry.

Serve and enjoy...so delicious.

St. Patrick's Day



Since tomorrow is St. Patrick's Day we thought we'd pick something green to blog about. Two of our favourite green things to eat are guacamole and pesto (not at the same time though), so here's some green sauces & dips!


Spinach Basil Pesto

Ingredients:
4 cups spinach
2 cups basil
2 cloves garlic
1 Tbsp lemon juice
1/4 cup Parmesan cheese
1/2 tsp salt
1/2 tsp black pepper
1/3 cup olive oil, plus 1 Tbsp


Directions:
1 - Place the spinach, basil, garlic, lemon juice, Parmesan cheese, salt and pepper in a food processor or blender. Turn on the machine and blend for 30 seconds. Slowly stream in the olive oil while the machine is running. Process until smooth.
2 - Serve with pasta, veggies, chicken, etc.
3 - Store the pesto in a jar or container in the fridge for up to 2 weeks.

Guacamole


Ingredients:
2 avocados, peeled
2 cloves garlic, chopped
1/2 tomato, chopped
1/4 cup red onion, chopped
1 Tbsp. lime juice
1 Tbsp. cilantro, chopped
1-2 tsp. salt
1/4 jalapeno pepper, seeded & chopped - Optional

Directions:
1 - Place all ingredients in a bowl and blend with hand blender until smooth. (Use a fork to mash ingredients if you prefer your guacamole chunkier).
2 - Serve with tortilla chips, nachos, etc. or as a side to enchiladas, tacos and more.
