Baked Manicotti



Once again another week at home. I think I say that every week! I thought I’d make some comforting pasta and since I had more time on my hands, I thought I’d make one that takes a little more time. I decided on a stuffed pasta, manicotti to be exact. Now, the filling that I made can be used for any of your favourite stuffed pastas. Manicotti was what I could find at the store. It’s a little bigger in size than the cannelloni that I usually use and a lot bigger than the jumbo shells that I sometimes stuff as well. So enjoy the pasta!

Stuffing

For this stuffing you will need...
About 2 lbs. of ground beef
¼ cup of parsley
2 cups of mozzarella cheese, shredded
½ cup of parmesan cheese
3-5 cloves of garlic
1 small onion chopped, optional
1-1  ½ cup of tomato sauce
1 tsp. salt
1 tsp. pepper

Brown the garlic and onions in a pan with some olive oil.

Once browned, add in your ground beef and cook well. Drain.


Once cooked and drained, add in the cheeses, tomato sauce, salt and pepper, and parsley.



Mix it all up and cook until all incorporated and gooey ooey.


Place in a glass dish. Once cooled, cover and put in the fridge overnight.


Usually the next day, I prep a tomato sauce. I add peppers, zucchini, diced tomatoes, etc.  whatever you like in your red sauce, add in. Let that simmer.

While your sauce is simmering, stuff your pasta. Some stuffable pastas you can fill when uncooked and they will cook in the oven when you bake your pasta, but the one that I got requires you to boil them first, so that’s what I did.

I just followed the package instructions and then let them cool slightly so that they were easy to handle.

When they were cool enough, I stuffed each of them with the ground beef filling that I made the day before. Be sure not to over fill as they will explode in the oven.


You can freeze any of the leftover filling or use it in another pasta or sauce.

Once the pastas were all filled and ready, I placed them in a casserole dish (put some sauce on the bottom first) and then cover with more of your sauce and then with a layer of mozzarella cheese.


Bake at 350 degrees for about 45 minutes or until boiling. Since the pasta is already cooked, you want to make sure you don’t overcook and make the pasta mushy. The pasta is ready when the cheese is all melted. You can put it on a broil at the end to brown the cheese a bit.

Serve warm and enjoy!

Chicken Cacciatore



Yay it’s Thursday! It’s been a long week so far. Anyways, we are taking a break from the baby shower planning for now and we’re going to share with you a simple recipe that you can make on the weekend ahead.

Chicken Cacciatore is a family favourite dish. I don’t always have the time to make it, but this past weekend we had a stormy indoor Sunday so I thought why not. It’s the perfect comfort food dish to have after a long week and on a cloudy hibernating day.

To make Chicken Cacciatore (to serve five people roughly) you will need the following…

16-20 chicken thighs, with bones and skin.
1 can (796ml) of diced tomatoes
Your favorite tomato sauce, we used Classico’s Tomato Basil (or you can make your own)
12-20 sliced white mushrooms
2 tsp. of dried oregano
½ tsp. of dried basil
1 red chopped pepper
1 green chopped pepper
Salt (to taste)
½-1 tsp. of black pepper
3 cloves of garlic
Rice or pasta to serve with the chicken

Start by salting and peppering your chicken. Let it sit for about an hour.


While that’s happening, chop up your peppers and garlic and sauté them in a big pot until a little bit softer but leave some crunch. 

While the peppers are softening, you can slightly cook your chopped up mushrooms in a separate pan and set aside. You want the mushrooms to get a bit darker and softer and to cook some of the liquid out of them.

Add in the seasonings and the diced tomatoes. Stir around and then add in your tomato sauce. Allow your chunky looking sauce to boil and then simmer while you cook your chicken. 


Now it’s time to cook the chicken in batches making sure they get nice and crispy. I cooked them until they were almost fully cooked but you can leave them less cooked and let them finish cooking in the oven. I’m always super worried about under cooked chicken though. I started by cooking them on both sides for 5 minutes and then going back to the original side and cooking for at least 3 more minutes (make sure you don’t burn).


Place the prepared chicken into a couple of Pyrex dishes and cover with the tomato sauce. It’s not meant to be a runny type of sauce; you want it to be thicker over top of the chicken.

Cook further for an hour at 350 degrees.

When it comes out it should be steaming and bubbling.


Serve over rice or pasta. I also made some of my cheese biscuits to go along with it. They are always a hit

Dive In - Dip Recipes



Another week has flown by and now it’s time for another week of our Summer theme posts. This week the shade that we chose is a dark navy metallic shade called “Dive In.” We automatically thought about dips when we heard this name, food dips, not dips in the pool, so we went on the hunt for recipes that sounded super yummy and that we needed to try and we found some. One is savoury (a spinach dip) and one is sweet (a cannoli dip). So take a look below and see what we created...

If you’re craving something sweet...try this cannoli dip recipe.

Sometimes you just need a little spoonful of sweetness to get you through the day/hour so a dip like this would be perfect. Canollis are something that I have always wanted to try and make but there’s a lot of work to go into making them. This dip is the perfect alternative.

You just need 1 cup of ricotta (dry and drain it if you can as we didn’t and it made the dip a bit watery), 1 room temperature brick of cream cheese (8 oz.), 1 cup of powdered sugar, 1 tsp. of vanilla, and 2/3 cup of chocolate chips (mini or regular both work).

Whip the cheeses and the sugar until smooth. Then add the vanilla in and whip for about 30 seconds.


Lastly add the chocolate chips and give a good stir.


Allow your dip to get a bit cooler in the fridge.

While it’s cooling, chop up some fresh fruit. We used pineapple and strawberries but you experiment with other fruits and berries too. We also broke up some waffle and sugar cones to dip as well.


If you’re in the need of a savoury treat...you can give this spinach dip a go. This one would be a perfect addition to a potluck or family dinner as a starter or in our case it was a perfect addition to games night.

For the dip you will need...
8oz. brick of cream cheese
1/4 cup of mayonnaise
2 cups of uncooked spinach
1 tsp. of onion powder
1/2 tsp. of garlic powder
A sprinkle of ground pepper
1/3 cup of parmesan cheese
1/2 cup of Monterey Jack cheese

Preheat the oven to 350 degrees.

Boil your 2 cups of spinach and set aside.


Heat the cream cheese in the microwave for about a minute to soften. Keep an eye on it.


We combined and mixed our dip with a mixer but you can do it by hand instead. Combine the cream cheese, spinach, mayonnaise, onion and garlic powder, grated cheeses, and pepper. Mix well.



Bake in a small casserole dish for 10 minutes.

When it comes out of the over, give it a good stir and serve immediately.


When it came to dipping we used a fresh French loaf and tortilla chips but you can also dip veggies or pita chips. You can also use the dip on burger, sandwiches, crackers, in wraps, and on meat.

Savory Popcorn for Mom



Mother’s Day is just days away and if you’re thinking about making her a treat, why not try something a little different like some savoury popcorn.

We’ve come up with a list of some recipes that can spice up the typical popcorn snack. You can make it for your mom as an appetizer snack, package some up as a gift, or serve it with an after dinner movie or some relaxing time with your mom.

I’m usually a plain butter and salt popcorn gal. Every so often I’ll make a batch of caramel popcorn (we blogged the recipe here a few years ago) as a treat. Today though we are focusing on the savoury type of popcorn with lots of flavour! Take a look at some of the recipes below and see if anything stands out and give it a go for your mom or just for fun.

All of these recipes are best on some freshly popped popcorn. The recipes will nicely coat about 12-16 cups of popped popcorn but you can cut down the recipes to however much you’d like to make.


Brown Butter Lemon – Cook 6 Tbsp. of butter in a pan until browned and then take the pan off the heat and add 1 ½ tsp. of lemon zest. Stir and pour over the popcorn. Toss with salt.



Garlic and Herb – Melt 4 Tbsp. of butter in a pan and add 4 cloves of grated garlic and a tsp. each of fresh finely cut rosemary, sage, thyme and Drizzle over the popcorn and toss with some salt and
cook for a minute.


Parmesan and Rosemary – Add ½ cup of grated Parmesan along with 3 Tbsp. of olive oil, 1 Tbsp. of fresh finely cut rosemary, and toss with salt.



Three Cheese – For this one you’re gonna want to make sure your popcorn is warm. Then toss in 2 cups of shredded cheddar, 1 cup of grated Parmesan, and a ½ cup of Pecorino. Spread it all on a baking sheet (lined is probably best) and bake it at 350 degrees until the cheddar melts. About 3 minutes. Keep an eye on it though!



Italian Cheese – Mix 6 Tbsp. grated Romano cheese, 2 ¼ tsp. of Italian seasoning, and ¾ tsp. of garlic salt.  



Sesame – Heat 6 Tbsp. of butter with 2/3 cup of sesame seeds and cook until the seeds are toasted (5 or so minutes). Stir in 1 Tbsp. of sugar and toss with some salt.


Sesame Ginger – Melt ¼ cup of butter and stir in ½ tsp. of sesame oil, a drip or two of soy sauce, and a pinch of ginger powder. Pour over the popcorn and toss well.


Bacon Chive – Cook up some chopped bacon bits (6 slices is fine but you can some extra because the more bacon the better!). Keep the drippings and drizzle 2 Tbsp. of that with the same amount of butter over the popcorn and then toss with the bacon, ½ cup chopped chives, and ½ tsp. of cayenne. Season with some salt but it might be salty enough with the bacon and drippings.


Sriracha Lime – Whisk 5 Tbsp. of melted butter with ¼ cup of  Sriracha , 1 ½ tsp. of lime zest, , and 1 Tbsp. of lime juice and drizzle over the popcorn. Toss with salt.  




Chipotle – Melt 4 Tbsp. of butter with 2 Tbsp. of Chipotle hot sauce, and 1 tbsp. of Chipotle chile powder. Drizzle over the popcorn and toss with salt and corn nuts.


Cajun – Melt 4 Tbsp. of butter with 1 Tbsp. of Cajun seasoning , 1 tsp. of lemon zest, ¼ tsp. of cayenne, and 2 chopped scallions. Drizzle over the popcorn and toss with salt.


Curry- Melt ¼ cup of butter add in 2 Tbsp. of curry powder and mix well. Add in a tsp. of salt and a Tbsp. of turbinado sugar pour over the popcorn and toss. You can add in some more sugar or salt while you toss.


Buffalo – Melt 6 Tbsp. of butter and mix in 1/3 cup of Buffalo sauce toss in your popcorn and mix well. Add in ½ cup of crumbled Blue cheese and some celery leaves. Toss with some salt.  


French Onion – Melt 6 Tbsp. of butter with a packet of French onion soup/dip mix and toss with warm popcorn. Sprinkle in a package of French fried onions.


Salt and Vinegar – Combine ¼ cup of malt vinegar with 2 tsp. of salt and pour into a clean spray bottle. Shake well to dissolve all of the salt and spray over the popcorn.



There you have it many ways that you can make your popcorn more interesting. You can even make small batches of a few and get your mom to do a taste test to see which she likes best. Pair you savoury popcorn with some nice wine or other cool beverage and enjoy.
