Extreme Chocolate Birthday Cake



Hello, it’s Nicole here! So, it was my birthday not too long ago…now, my husband hates shopping at the best of times, let alone right now with everything that is going on. So being the thoughtful husband that he is (albeit, with some ulterior motives :P), and knowing how much I love chocolate, and cake, and chocolate cake, and spending time with him…but mostly chocolate cake…he suggested that we bake a big multi-layer chocolate cake together for my birthday. Of course I said yes, and thought I’d share it here too.

 There used to be a restaurant in town that my parents like to go when I was growing up, and they had this delicious 7 layer chocolate cake that my dad absolutely loved. The restaurant shut down, and years later my dad finds out someone he knows used to work there and gave him the recipe! The original recipe was for 12 cakes, but has been cut down for one so that’s why some of the measurements may seem a little funny.  (I also included the measurements we used to make two ¼ sheet pans).

 We decided that this was the chocolate cake we were going to bake, and frost it with my favourite chocolate frosting recipe from my mom (we doubled it), and fill between the layers with Samantha’s chocolate mousse, which we have blogged about here. Since we wanted more than two layers, but only had two cake pans, we decided to do two sheet pans (took 3 single recipes) and cut them both in half for a rectangular four layer cake.

 

Without further ado…here’s our cake:

 

Chocolate Cake

Makes one 10” round cake

(Amounts in brackets, for two 12”x17” sheet pans)

 

Ingredients:

1 cup Sugar (3 cups)

¼ cup + 2 tsp. Cocoa Powder (¾ cup + 2 Tbsp)

½ cup + 2 Tbsp. Oil (1¾  + 2 Tbsp.)

½ cup + 2 tsp. Hot Water (1½ cup + 2 Tbsp.)

2/3 cup Mayo (2 cups)

1¾ cups Flour (5¼ cups)

1 tsp. Baking Powder (1 Tbsp.)

1½ tsp. Baking Soda (4½ tsp.)

2/3 cup Buttermilk (2 cups)

3 Eggs + 1 Egg White (9 Eggs + 3 Whites)

 

Directions:

Preheat the oven to 300°F

In a mixer with the whisk attachment, mix the sugar and cocoa, until blended. Add the oil and blend until smooth, then add the hot water and mix well. Add the mayo and blend until smooth.



Add the flour, baking powder, baking soda and buttermilk.




Mix on low until all dry ingredients are wet – make sure to scrape down the sides of the bowl. Now mix on high to get rid of any lumps – do not over mix.

Add eggs and mix on medium speed until well blended – do not over mix.


Pour batter into greased & lined 10” pan put in the preheated oven right away (do not let them sit out). Bake for 50-60 mins.



Let cool before filling and frosting.



Mousse

(We made 1 1/2 recipes)

Chocolate Frosting

(We doubled this recipe)

Ingredients:

½ cup Sugar

½ cup Water

¼ cup Cocoa Powder

6 oz Dark Chocolate

6 oz Unsalted Butter

 

Directions:

Heat sugar, water and cocoa in a saucepan, stirring until smooth and sugar is dissolved. Remove from heat. Add the chocolate and butter to the pan and whisk until both are melted and mixture is smooth.



Chill for at least an hour in the refrigerator. Mix on high speed in mixer until fluffy.



 

Once all the components were ready, we trimmed the edges of the cake then measured and cut them both in half so we had four equal sized layers. We decided to build it on a sheet pan because we didn't have any other plates or trays that were big enough! We split the mousse into three equal parts. Put the first layer of cake down an covered it with mousse, followed by the second layer of cake, then mousse then cake, then mousse, then cake.


    

We then put this in the freezer to harden up the mousse a bit before frosting it. 


We had a bit of a mishap when layering the mousse on. The second layer of cake broke in half when we put it on, and then when we put it in the fridge to harden the mousse up a bit, it slid and the top layers started falling off and getting mousse everywhere. We were able to fix it, but next time we would probably surround each layer with an frosting ‘dam’ along the edges to hold the mousse in. The weather was also fairly warm, so that probably didn’t help. In the end, we put it in the freezer once we fixed it, so that it would be easier to frost. This also made the tray messy, but thankfully that doesn't change the flavour!



It was delicious, and chocolatey…and GIANT…and heavy! Now I understand why in all those cake shows on TV they talk about how heavy their fancy cakes are!! There was so much cake that we shared some with my family, my husband's family and still had extra that we put in the freezer so we could enjoy it again later.

Apricot Day



We are doing a mini theme for the rest of the month...National Days. Today happens to be National Apricot day so we are going to give you a little info about the apricot and a couple sweet and savoury recipes to try out.

The apricot is a stone fruit and comes from a small tree with a dense canopy and oval leaves. It bears flowers that are whitish and pink. The actual fruit looks like a small peach with a firm and not very juicy flesh and is often yellow to orange with a red tinge sometimes if it gets too much sun exposure. Apricots are often eaten dried with the world’s largest producer being Turkey. When dried, the nutrients are actually increased with Vitamins A and E, potassium, and iron having 25% of the daily value.

Check out this sweet recipe we found...

Honey Grilled Apricots

You will need...
3 Tbsp.butter
2 Tbsp. sugar
6 to 8 apricots (halved and pitted)
2 Tbsp. honey
1 lemon

How to make...
Melt butter and sugar together in a large pan.

Add apricots and coat with butter mixture.

Place on grill for 6 to 7 minutes, turning often.

Once cooked, place apricots on dessert plates cut side up, drizzle with honey and lemon juice, and serve warm with a scoop of ice cream or with slices of Brie cheese.

Garnish with cinnamon and mint leaves.


Apricot Preserve

You will need...
2 cups dried apricots
1 1/2 cups sugar
1 Tbsp. lemon juice
1 3/4 cups water

How to make...
Finely chop the apricots in a food processor. Make sure the pieces are all uniform.

Place the apricots in a slow cooker. Stir in the sugar, lemon juice, and water. Cover and cook on high for 2 hours, stirring occasionally.

Uncover and cook on high, stirring occasionally, 1 to 2 hours longer or until the mixture has thickened.

Ladle into clean glass jars. Let the glass jars cool before sealing. Store in the refrigerator for up to a month.


Savoury recipes...

Apricot BBQ Sauce

You will need...
1/2 cup apricot preserves
1/4 cup onion (pureed)
1/4 cup ketchup
2 cloves garlic
2 Tbsp. mild chili sauce
2 Tbsp. soy sauce
1 Tbsp. rice wine vinegar
1 Tbsp. vegetable oil
1/2 tsp. black pepper
1 pinch salt

How to make...
In a medium saucepan, heat olive oil.

Add pureed onion and cook for 1 minute, stirring constantly.

Then add the garlic and cook for another minute.

Finally add remaining ingredients and allow to bubble up slightly.

Reduce heat and simmer through for 5 minutes, stirring often.

Once ingredients have formed a glaze-like consistency, remove the pan from heat and allow to cool before using.


Moroccan Chicken and Apricot Tagine

You will need...
1 whole chicken, cut into eight pieces
2 medium onions, grated
3 to 4 cloves of garlic
3/4 tsp. salt
1 1/4 tsp. ginger
1/2 tsp. saffron threads, crumbled
1/2 tsp. black pepper
1/4 tsp. white pepper
1/2 tsp. turmeric
1 or 2 small 3-inch pieces of cinnamon stick
3 Tbsp. butter
2 Tbsp. olive oil
A small handful of cilantro sprigs tied into a bouquet
1/2 cup chicken broth
3/4 cup water
3 Tbsp.sugar or honey
1 tsp. ground cinnamon
1 cup dried apricots
1 to 2 tsp. sesame seeds

How to make it...
Remove the skin from the chicken.

Combine the spices in a large bowl, add the chicken, and toss to evenly coat the chicken pieces with the spices.

Over medium-low heat, melt the butter in the base of a large tagine. Add the olive oil, onions, garlic, and cinnamon. Add the seasoned chicken, meat-side down, in a single layer on top of the onions. Place the cilantro bouquet on top.

Add the broth to the tagine. Swirl the water in the bowl to cleanse it of the spices, and then add the water to the tagine as well. Cover and leave the liquids to reach a simmer over medium-low heat.

Once simmering, cook the chicken, for one hour. Remove and reserve 1/2 cup of the cooking liquids.

Carefully turn the chicken pieces over so that they are meat-side-up. Cover and continue simmering for another 30 minutes to one hour, until the chicken is done and the liquids are thick and reduced. 

Mix together the honey and cinnamon to form a flavuored syrup.

Top your finished dish with the honey-cinnamon syrup, dried apricots and sesame seeds.

Lamb


This week we are going to Iceland and taking a look at one of their famous Christmas foods; it’s called Hangikjöt.

Hangikjöt is a smoked lamb. It became popular in the 9th and 10th centuries and it was smoked over sheep dung. To keep with the tradition, it is still often smoked in dung but birch is used as well. Now it’s cold smoked, boiled, or roasted after dry salting or brining first; smoking usually lasts for up to two weeks. It’s often popular to smoke either a leg or shoulder. As part of Christmas dinner it is often served with potatoes and creamy sauce and canned peas. It’s also popular cold and in slices on sandwiches for lunch. About 90% of Icelanders will have Hangikjöt during the holiday season.

We thought we’d use the main ingredient of lamb and share with you some fun appetizer recipes for all those Christmas parties that you may be attending and needing to find the perfect dish to bring along with you. Check out the three that we thought sounded pretty interesting!

Mini Lamb Meatballs

You will need...

1 lbs ground lamb
¼ small red onion, finely chopped 
1 clove minced garlic
¼ cup breadcrumbs
2 eggs
1 tsp. lemon zest
2 tsp. lemon juice 
2 Tbsp. chopped fresh dill or mint
1 Tbsp. chopped fresh oregano or parsley
3/4 tsp. kosher salt
1/4 tsp. fresh ground black pepper
1 pinch crushed red pepper flakes
1 Tbsp. olive oil

For the Lemon Yogurt...

1 cup thick plain Greek yogurt
2-4 tsp. lemon juice
1 pinch kosher salt
1/4 tsp. fresh ground black pepper

How to...

Preheat oven to 375 degrees. Line a baking sheet with foil.

Place all ingredients for meatballs in a large bowl and mix until all ingredients are well combined.

Using a tablespoon measuring spoon, roll one tablespoon of lamb mixture into small balls and place on a baking tray about 1" apart.

Bake for 10-12 minutes.

Serve with a savoury lemon yogurt, sliced cucumber, and toasted pine nuts or just have plain.

Baby Lamb Chops with Sauces

For the chops you will need...
1 tsp. kosher salt
12 to 15 baby lamb chops, bones Frenched
1 Tbsp. olive oil

For the Red Sauce you will need...
2/3 cup water
1/2 cup oil-packed sun-dried tomatoes
1/3 cup fresh basil leaves
2 Tbsp. red wine vinegar
1 tsp sugar
1 tsp ground cumin
1/2 tsp kosher salt
1 clove garlic
1/4 tsp ground black pepper

For the Green Sauce you will need...
1 1/2 cups flat-leaf parsley leaves
2/3 cup fresh mint leaves
1/3 cup olive oil
1/4 cup lightly toasted almonds
1 Tbsp. lemon juice

How to make...

Salt both sides of the lamb chops. Heat oil in a large non-stick pan over high heat. Cook in two batches, turning once until chops are deep brown and cooked to medium-rare. Serve with sauces.

Red Sauce - Combine the water, sun-dried tomatoes, basil, vinegar, sugar, cumin, salt, garlic and black pepper in a food processor and process until smooth. 

Green Sauce - Combine the parsley, mint, olive oil, almonds, and lemon juice in a food processor and process until smooth. 

Sauces can be made ahead and stored in airtight containers in the fridge up to a day in advance. 

Lamb Stuffed Mushrooms

You will need...
1/2 onion
15 Cremini mushrooms
1 clove garlic
1/4 cup ricotta cheese
1/4 cup grated parmesan cheese
½  pound ground lamb
Butter, to taste
Breadcrumbs, to taste
sage leaves
2 Tbsp. olive oil


How to make...

Preheat the oven to 350 degrees.

Clean the mushrooms and remove the stems.

Finely chop 3 of the mushrooms and set the others aside.

Finely dice the onion, garlic, and chop the sage. Set aside.

When the oven is hot, toss the remaining whole mushrooms with olive oil and roast for 15 minutes.

Combine the ricotta and parmesan cheese.

Brown the lamb. Strain and then sauté the onion over medium heat in the fat for about 5-7 minutes, until translucent. Stir in the garlic and cook for a minute.
Stir in the diced mushrooms and cook for another 5 minutes. Then stir in the breadcrumbs, butter, and sage leaves. Turn off the heat and mix lamb back into the mixture.

Place roasted mushrooms bottom side up on a sheet pan. Turn on the broiler in your oven.
Stuff your mushrooms with your lamb mixture. Top the stuffed mushroom with a small spoonful of cheese mixture. Then place in the oven for 5 minutes or until cheese is slightly crispy.

Christmas Foods from around the World



Apple blogs are over and now as we enter into November, we have to think about Christmas. I know it seems early but this year it’s creeping up so fast. I can’t believe that it is November already! We probably always say that every year at this time.

We always love a good theme for Christmas time and this year it won’t be different. We’ve done gifts, 12 Days of Christmas, traditions, posts inspired by our cards and that’s just a few that we have done in past years. This year we’re looking at traditional foods served at or around Christmas time. Some of our posts will be inspired by the type of food that we’re looking at and some posts will be actual recipes that we try out (we might add a little twist to them, we’ll have to see).

We’ll be taking a look at foods from all over the world including the all famous Christmas fruit cake popular in all parts of the world with different takes in different places. You either love it or hate it. We’ll also go to Germany and look at the Stollen which is what they are known for and look at Iceland’s Roast Lamb as well as checking out Canada and all its cookies.

So get cozy and festive and get ready for seven weeks of yummy recipes and fun Christmas crafts.

Mint'd Mojito - Mojito "Recipes"



Sadly, we are getting close to the end of our fun Summer theme. We do have three more posts so that’s exciting. Today our shade is called “Mint’d Mojito” by Fenty and they call it a metallic mint blue.

We’ve decided to break down the Mojito so we’ve found a few interesting recipes featuring the mint and the lime. If you don’t already know, a mojito has both lime and mint flavours in it along with some alcohol. I’ve never had one myself but it always looks so refreshing and bright.

Here’s a recipe for one...



You need 2 ounce of light rum, 2 tsp. of sugar, 6-8 fresh mint leaves, a splash of club soda, and 1 lime cut in half.

Place the sugar, mint leaves, and splash of club soda into a highball glass. Muddle well to dissolve the sugar and to release the flavour of the mint.

Squeeze the juice from both halves of the lime into the glass and drop one half in.

Add the rum and stir well.

Top with club soda and garnish with fresh mint.

Here are a couple savoury recipes...

Moroccan Chicken

1/2 pounds boneless skinless chicken, cut into bite size cubes

2 cloves garlic
1 inch piece fresh ginger, peeled and roughly chopped
2 tsp. dried chile de arbol, seeds removed (1/2 - 1 tsp. cayenne pepper)
2 Tbsp. fresh cilantro
2 Tbsp. fresh parsley
1 Tsbp. smoked paprika
1/2 tsp. cumin
1/2 tsp. cinnamon
1 tsp. salt
1 tsp. pepper
1/2 cup olive oil
1 small to medium lemons grated & juiced
1 ounce jar marinated artichoke quarters
1 bunch asparagus, cut into quarters

Vinaigrette:
1 lemon, juiced & zest
1/2 a lime, juiced
1/4 cup olive oil
1 Tbsp. fresh parsley, chopped
1 tsp. salt
1 tsp. honey

Goat Cheese Yogurt:
1/2 cup plain Greek yogurt
2 Tbsp. fresh mint, chopped
1/2 tsp. crushed red pepper flakes
1/2 lemon, juiced
salt and pepper, to taste
2-3 ounces goat cheese, crumbled


Place the chicken in a gallon size ziplock bag or medium size bowl.

In a food processor add the garlic, ginger, dried chile de arbol (or cayenne), cilantro, parsley, smoked paprika, cumin, salt and pepper. Process 1-2 minutes or until everything is finely chopped.

Stream in 1/2 cup olive oil. Stir in the lemon zest and juice.

Pour the marinade over the chicken and toss well. Place in the fridge for at least 2 hours or overnight.

To make the vinaigrette... add the lemon zest and juice to a small sauce pot. Bring mixture to a simmer and simmer, about 1 minute or until the zest absorbs the juice. WATCH CLOSELY, you do not want the zest to get burnt to the pan.

Spoon the zest out of the pot and into a small bowl. Add the olive oil, parsley, salt, honey and lime juice. Whisk to combine. Set aside.

To make the minted goat cheese yogurt mix together the Greek yogurt, chopped mint, crushed red pepper flakes, lemon juice and a pinch of salt and pepper. Stir in the crumbled goat cheese. Place in the fridge until ready to use.

Preheat the grill or a grill pan to medium-high heat and lightly oil the grates. Thread the chicken, asparagus and artichokes onto metal skewers (or wood skewers that have been soaked in water). I alternated with asparagus+ artichokes and then chicken, repeat. Place the chicken on the grill until the chicken is golden and no longer pink in the centre, about 5 minutes each side. You may also cook the chicken in a skillet if needed. Serve the chicken with the the lemon herb vinaigrette and the minted goat cheese yogurt.


Lime Shrimp Avocado Quinoa Salad
Ingredients:
1 cup quinoa
¼ cup olive oil
2 Tbsp. honey
2 limes, juiced
½ tsp. chili powder
½ tsp. kosher salt
½ tsp. black pepper
1 shallot, finely diced
 cups sweet corn, frozen and thawed or fresh
1 can black beans
1 avocado, thinly sliced
1 cup cherry tomatoes, halved
½ lb frozen shrimp, defrosted
¼ cup parsley, chopped

Instructions:
Cook your quinoa following directions on the package. Fluff the quinoa with a fork after it’s done cooking and set aside to cool.
Whisk the olive oil, honey, lime juice, chili powder, salt and pepper. Finely dice the shallot and mix in with the dressing. Set aside.
Prepare all the vegetables for the salad.
Spoon the cooled quinoa into 4 bowls and divide up the vegetables placing them on top of the quinoa. Next, add your shrimp to the bowls. Drizzle the dressing over the salad and sprinkle chopped parsley over top.


For something sweet...

Mint Butter Cream Icing

4 cups of Powdered Sugar
1 cup Butter
1 Tbsp. Milk
1/2 tsp. Peppermint Extract
Yellow and blue food colouring

Add powdered sugar to mixing bowl.
Add softened sticks of butter
Add 1 Tbsp. of milk.
Beat on low until powdered sugar is incorporated. Then move mixer up to medium-high speed.
Scrape sides and bottom of bowl often. When completely mixed the frosting may appear dry.

Add more milk, a little bit at a time until frosting is the proper consistency.
Add Peppermint Extract.


Mint Chocolate Popsicles
2 2/3 cups full fat coconut milk
3/4 cup packed fresh mint leaves
3/4 cup sugar
1/8 tsp. salt
peppermint extract (optional, and to taste)
food colouring (optional)
3 ounces semisweet chocolate, finely chopped
Combine coconut milk and fresh mint leaves in a saucepan over medium heat. Heat for 5 minutes, until bubbles appear around the edge of the pan. Remove from heat and let steep 20 minutes. Strain infused coconut milk through a fine-mesh sieve into a bowl, pressing on the mint with the back of a spoon. Whisk in sugar, salt, peppermint extract, and food colour (2 drops green, 1 drop blue) until smooth. Let mixture cool to room temperature, then cover and chill for 6 hours in the refrigerator.
Stir chopped chocolate into mixture and fill popsicle molds, leaving a 1/2-inch of space at the top of each mold. Freeze for about an hour, then insert popsicle sticks and freeze overnight. To unmold, let popsicles stand at room temperature for 5 minutes. Carefully remove from molds and serve.


Key Lime Chex Mix
Ingredients:
9 cups Rice Chex cereal
1 1/4 cups white chocolate baking chips
1/4 cup butter
4 tsp. grated key lime peel
2 Tbsp. fresh key lime juice
cups icing sugar
Instructions:
Measure cereal into a large bowl, set aside. 

In a microwave safe bowl put chips, butter, peel and juice uncovered on High for 1 minute; stir.   
Microwave about 30 seconds longer or until mixture can be stirred smooth.

Pour mixture over cereal, stirring until evenly coated.
Pour into 2-gallon resealable food-storage plastic bag.
Add icing sugar. Seal bag; gently shake until well coated. Spread on waxed paper or foil to cool. Store in airtight container.
