Orangeness


Happy Friday and Happy Easter too this weekend!



I’m still thinking about those delicious cranberry bliss bars we made last time. Those were sooooo good. An ingredient that we had to buy in order to make those bliss bars was orange extract. I had never baked with orange extract and since we had so much leftover we thought that we’d go on the hunt for some orangy recipes.



First of all we thought we’d do an orange take on one of our staple recipes...our fudge. Chocolate and orange are good flavours to pair together so instead of using vanilla in our easy three step fudge, we just added orange extract.


To remind you, we melt 3 cups of chocolate chips and one can of sweetened condensed milk in the microwave for 30 sec increments, stirring in between. Then this is where we add the vanilla usually, but this time we added 2 teaspoons of orange extract. Then pour the fudge into a parchment lined 8 inch pan and chill in the fridge or freezer until firm. Remove and cut into squares.



I thought this was really smooth and delicious. I kinda liked it more than just the plain chocolate fudge, but that’s just me. I do think we could of added more of the orange extract so that would be something to take note of for next time.


Another recipe, at the urging of my dad, that we thought we’d try is mini orange muffins. We hunted for a good recipe so I found one and tweaked it to my liking.



Mini muffins are always a hit and I think with a refreshing flavour like orange, a mini muffin would be a nice bite rather than having a huge orange flavoured muffin. We made a few versions of this muffin as we experimented in the kitchen. You can leave the muffins plain or you can put on a glaze type icing which I have included below along with the muffin recipe.



Mini Orange Muffins



Ingredients:



1 cup of butter, softened

1 cup of granulated sugar

1 tbsp. vanilla

1 cup of freshly squeezed orange juice along with the zest (one large orange equaled a cup for us)

½ cup of sour cream (plain yogurt works fine too as that’s what we used because we had no sour cream)

2 cups of flour

2 tbsp. cornstarch

2 tsp. baking powder

½ tsp. salt

2 tsp. of orange extract



Directions:



Preheat the oven to 350 degrees and line mini muffin tins with mini muffin liners.



In your mixing bowl, combine butter, sugar, eggs, and vanilla and cream until smooth.



Then add in the orange juice, orange extract, and sour cream or yogurt. Mix until blended.


Now mix and add in your dry ingredients (flour, cornstarch, baking powder, and salt). Mix until incorporated and then stir in the orange zest. 


Divide the batter among the muffin cups. Fill ¾ of the way to the top. 


At this point, we decided to try adding milk chocolate chips to a few of the muffins to see what that would be like since we tried the chocolate and orange combination with the fudge.



Bake for 20 minutes.



While the mini muffins are baking, you can make the glaze if you want to have one.



Ingredients for the Glaze:



1 ¼ cup of icing sugar

¼ cup of softened cream cheese

3 tbsp. of orange juice

¼ tsp. vanilla

Pinch of salt

3 tsp.-1tbsp. of orange extract



All you need to do for this glaze is grab a small mixing bowl and combine all of the ingredients together and stir until you get a smooth lump free glaze. You can also mix up all the ingredients in a stand mixer and combine them all together that way.



By now the 20 minutes of bake time are up and the muffins should be ready. Pull them out of the oven and let them cool on a rack for just a bit. Then you can ice them if you like or leave the icing off to the side and those who want it can ice their own. With the icing on them, they do seem more like cupcakes. Both ways were really good and the addition of the chocolate chips was nice too for those who need a little chocolate in everything!

Cranberry Baking






Cranberries are the topic of the day. We have been meaning to do a cranberry blog since Christmastime but have always had other ideas pop up, so now we’re doing a Springtime cranberry blog. We have found some really delicious recipes that we hope you will like as well.

Cranberries can be used in so many different types of recipes both sweet and savory. At times they can be kinda sour if you don’t pair them up properly or sweeten them up. Cranberries pair quite well with white chocolate so those two ingredients are going to be in both recipes today. The cookies are a simple sugar cookie base with white chocolate chunks and dried cranberries, so take a look at the recipe and the final product below.

For the gooey white chocolate cranberry cookies you will need...

¾ cup softened butter
¾ cup packed brown sugar
¼ cup granulated sugar
1 egg
2 tsp. vanilla
2 cups flour
2 tsp. cornstarch
1 tsp. baking soda
½ tsp. salt
¾ cup white chocolate chips or chunks
¾ cup dried cranberries

Whisk together the flour, cornstarch, baking soda, and salt. Set aside.

Mix the butter and the sugars together. Then add in the eggs and vanilla. Then add the dry ingredients slowly and mix until well blended.

Stir in the cranberries and white chocolate.

Cover and chill the dough with plastic wrap or tin foil in the bowl for 2 hours-2days.

Once chilled, scoop balls of dough. We made them about a teaspoon in size and then roll them into balls. Place them on a parchment lined cookie sheet and bake at 350 degrees for 8-10 minutes.



The other treat we are making are a version of the Starbucks Cranberry Bliss bars. Since I have allergies, I have never tried a Bliss Bar, but Nicole has talked about them ever since we talked about baking with cranberries. I thought they sounded alright, nothing too exciting to me as I am not a super huge cranberry fan, but when I tasted these bars, oh my gosh, they were one of the most delicious things ever! One of my new favourites for sure. So take a look at our Friday night adventure in making Cranberry Bliss Bars.

For the bars you will need...

1 cup butter, melted
1 ½ cups packed brown sugar
2 eggs
1 tsp. orange extract
1 tsp. vanilla extract
½ tsp. ground ginger
1 tsp. baking powder
½ tsp. salt
2 cups flour
1 cup white chocolate chips or chunks (we used chunks)
¾ cup dried cranberries

For the icing you will need...

8 ounces or 1 brick of cream cheese
1 ½ cups of icing sugar
½ tsp. orange extract
½ tsp. vanilla
1/3 cup of dried cranberries
2 squares of white chocolate, melted

Preheat the oven to 350 degrees.

Prepare a 15x10 jelly roll pan by lining it with parchment paper. You can also use a rimmed cookie sheet instead. For thicker bars you can use a 13x9 size pan.

Beat the melted butter and sugar. Then add the eggs, one by one. 


After that, add both extracts until well mixed and then add in your mixed dry ingredients (flour, powder, salt, and ginger). Beat until all just mixed together. 


Stir in the cranberries and the white chocolate and spread evenly into the prepared pan.


Bake for 18-22 minutes or until set and the edges are golden brown. Don’t over bake.

Allow the bars to completely cool on a wire rack for at least a couple of hours. 


While the bars are cooling, you can mix the icing.  

Beat the cream cheese and icing sugar together until smooth. Add the extracts and mix well. Set aside until you are ready to ice the bars.


When the bars are cooled completely and ready to be iced, spread the cream cheese frosting over the top evenly and then sprinkle with the cranberries. 

 

Drizzle the melted white chocolate over the top (using a fork works well). You can slice and serve right away or let them sit in the fridge for a bit. That’s what we did and they seemed to firm up quite nice. You can cut them into the usual Cranberry Bliss bar shape, a triangle, or you can cut them up into square bars, up to you. They are delicious either way.

St. Patrick's Day



Since tomorrow is St. Patrick's Day we thought we'd pick something green to blog about. Two of our favourite green things to eat are guacamole and pesto (not at the same time though), so here's some green sauces & dips!


Spinach Basil Pesto

Ingredients:
4 cups spinach
2 cups basil
2 cloves garlic
1 Tbsp lemon juice
1/4 cup Parmesan cheese
1/2 tsp salt
1/2 tsp black pepper
1/3 cup olive oil, plus 1 Tbsp


Directions:
1 - Place the spinach, basil, garlic, lemon juice, Parmesan cheese, salt and pepper in a food processor or blender. Turn on the machine and blend for 30 seconds. Slowly stream in the olive oil while the machine is running. Process until smooth.
2 - Serve with pasta, veggies, chicken, etc.
3 - Store the pesto in a jar or container in the fridge for up to 2 weeks.

Guacamole


Ingredients:
2 avocados, peeled
2 cloves garlic, chopped
1/2 tomato, chopped
1/4 cup red onion, chopped
1 Tbsp. lime juice
1 Tbsp. cilantro, chopped
1-2 tsp. salt
1/4 jalapeno pepper, seeded & chopped - Optional

Directions:
1 - Place all ingredients in a bowl and blend with hand blender until smooth. (Use a fork to mash ingredients if you prefer your guacamole chunkier).
2 - Serve with tortilla chips, nachos, etc. or as a side to enchiladas, tacos and more.

Oscar Dress Card 2018!





Ok, so today is one of our most favourite posts of the year, yes today is Oscar dress card day. As you know from years past, we love taking our favourite dress worn at the Oscars and making it into a card. There are always so many beautiful dresses/outfits worn so it can be a difficult task, but we go through all of the dresses and look for one that inspires us and we create our version of it in card form. First of all though, we are going to count down our top 10 dresses. Some were quite close in the running for Oscar dress card of the year, so take a look at all these beautiful dresses and then take a look at our number one choice and the card we created. 

Our Oscar Top 10 Dresses, 2018: 

10. Ashley Judd – This dress is a very simple plum coloured strapless gown with a sweetheart neckline. Perfect if you want a simple classic look.



9. Allison Janney – This is simple yet not so simple dress. There isn’t a lot of bling or beading to it. It’s a plain red dress, yet it’s so elegant. The sleeves are what make this dress wow and stand out. Her sleeves are floor length with large slits for her arms to come out of. It’s almost like a shawl cape. I’ve never seen anything like it. 

8. Margot Robbie – There were a lot of classic white dresses this year. This one has some really pretty beading at the bodice. It could even be worn as a wedding dress. 


7. Leslie Mann – This is a princess gown dress. The red ball gown has a delicate flower pattern all throughout the dress. You don’t notice it right away because it’s in a shade that is very close to the dress colour. 


6. Molly Sims – Ok, so I LOVE this gown. It’s purplish silver with sparkly beads and a slit. I absolutely love the sleeves as well. 


5. Jennifer Lawrence/Gal Gadot –Metallic shimmery dresses were also another popular pick this year. These two stood out. Plus, it’s Wonder Woman! 


4. Helen Mirren – Again, this deep blue gown was so simple and sophisticated. The blue necklace is a nice touch to make this simple dress very elegant and chic. 


3. Allison Williams –This dress was a top pick for us and was almost our Oscar card. It is a nude blushy colour with cap sleeves, a puffy skirt, and really gorgeous intricate beading on the bodice. Again, this could be a perfect pick for a summer time wedding. 



2. Jennifer Garner – Some say it’s purple, some say it’s blue, but this is a stunning dress and colour. It especially looks nice with the dark brown hair that Jennifer Garner has. The one shoulder style is very flattering and the long flowy train makes it such a delicate Goddess like dress. 



1. Greta Gerwig – Ok, so our number one dress is this absolutely gorgeous canary yellow gown that Greta Gerwig, who was nominated for Best Director, wore. It’s a very straight sheath style gown with a v-neck and spaghetti straps, and it has these very dainty pretty flowers all over that had sparkles in them. The colour suited her perfectly; a very vibrant bright splash of colour. To top it all off, she finished the gown with a statement style necklace. Beautifully perfect!
