Big Fluffy Muffins

 

As the Fall settles in, I have been wanting to try out some new recipes while we are all hibernating inside again. I felt like having some muffins, so I found a muffin base recipe. It is a nice, fluffy, moist base that you can add so many flavour combinations to. I tried a basic blueberry muffin, but you can really try anything. Some suggestions are blueberry lemon, raspberry orange, mocha chip, apple cinnamon, banana chip, banana nut, lemon poppy seed, orange, or banana blueberry and those are just a few ideas I came up with. Now I made these muffins thinking that they would be just an average muffin and to use up some of my frozen blueberries that were going to expire so I didn't think to take pictures as I went along. However, they were so good so I'll make them again and make sure to take pictures. 

Basic Fluffy Muffin Recipe:

3 cups of flour

1 cup of sugar

½ tsp. of baking soda

1 tbsp. of baking powder

½ tsp. of salt

1 ½ cups of plain Greek yogurt

2 eggs

8 tbsp. of melted butter

1 ½-2 cups of fresh or frozen blueberries

Preheat your oven to 375 degrees.

Prepare your muffin tins with liners. I did all my muffins big as opposed to mini muffins. It made just over 24.

Whisk the flour, soda, powder, salt, and sugar.

Melt the butter in a glass measuring cup. Cool slightly.

In another bowl, whisk up the yogurt and eggs until smooth and then fold into the dry mix.

Then fold in the butter.

Lastly, stir in the blueberries.

Now it’s time to scoop. Usually I use spoons and scoop my muffins that way but these are supposed to be big fluffy muffins so I used a 1/3 cup and filled those muffin tins up. They may look full but they won’t overflow or cause a mess while baking, I promise.

Put into the oven for about 25 minutes; they may need a few minutes longer. You want them to be golden looking and to be able to insert a toothpick and it to come out clean.

Cool the muffin slightly on a wire rack and enjoy!

These were so delicious. One of the best muffins I ever had. They were so moist and not overly sweet or heavy. I will definitely be using this as my go to muffin base and try adding different things in the future.

Cool Lemonade

                                                           

Ah! It’s been two weeks again. I think the heat has gotten to me. We have had some very hot days and then it’s been busy with back to work as well. It’s important to be drinking lots of water in such heat but it is also nice to have a cool sweet drink every once in awhile as well. I’ve been loving Gerolsteiner. It’s not a sweet drink but a sparkling mineral water that has lots of magnesium in it for my sore and aching body at the end of the day. Plain, it’s kind of boring and like any bubbly water but if you add it to some juice it’s very refreshing on a hot Summer day. Try some of the combinations that I did and relax with the feet up.

I love lemonade on a hot day but it can be a little too sweet so I like to dilute it with the Gerolsteiner. If I don’t make my own I like the Simply Lemonade. I like to add different things to it. Try lemon, lime, or orange slices, sliced strawberries, and frozen or fresh mixed berries.  


I also love the Simple Raspberry Lemonade and adding Gerolsteiner to that is a delicious combination.

Try out this fresh lemonade recipe if you prefer to make your own. Adjust the sweetness accordingly.

                                                         

1 cup of freshly squeezed lemon juice

8-10 cups of water

½ cups of sugar

In a large pot, combine the water and sugar. Stir and heat until the sugar just melts.

Remove from the heat and add the lemon juice.

Mix well and then chill.

You can serve this with lemon, lime, or orange slices as a garnish.

Deep Blue - Blueberry Recipes



Welcome to September! This is the first post if the month and it’s quite fitting because the shade we are inspired by today is very close to September’s birthstone. The shade we are looking at is called “Deep Blue” and that’s exactly what it is, a deep blue (almost sapphire) metallic shade.

Our minds immediately drew us to the “Blue” so we decided to try out and share some of our favourite blueberry recipes.

The one that we tried out is called a Blueberry Streusel Bar. We have made it a couple of times before and it was always a hit so we thought we’d share this one and make it again.

You will need...
2 ½ cup of flour
2/3 cup of granulated sugar
½ tsp. of salt
2 ¼ sticks of butter/margarine softened
1 cup of rolled oats
¼ cup of packed brown sugar
¾ cup of blueberry jam (I have found this difficult to find so that’s why I don’t make these often)
¾ cup of fresh or frozen blueberries
1 Tbsp. of lemon juice

First off, preheat the oven to 375 degrees.
Then line a 13x9 pan with a foil sling and then grease.

Whisk the flour, granulated sugar, and salt in a large bowl.

Beat in all but 2 Tbsp. of the butter/margarine with your mixer so that it looks like wet sand.


Remove 1 ¼ cups of the mixture for the topping and place in a separate bowl for now.


Take the rest of the mixture and press into the bottom of the prepared pan and bake for 14-18 minutes. We let ours stay in the entire time so that the edges would actually brown.


While this is baking, you can make the filling.

In a small bowl mash up the jam, blueberries, and lemon juice.



In the bowl with the extra mixture, add in the two remaining Tbsp. of butter/margarine and squish with your fingers into small clumps.


Once the crust has finished baking, then spread the jam filling over the warm crust and sprinkle with the streusel. Put back into the oven and bake for 22-25 minutes.






Allow to cool for 2 hours and then cut into squares.


You could also cut them into bigger squares and while still warm, top with ice cream for more of a dessert type treat. Also, I collected all of the streusel bits that were loose and fell off the bars while I was cutting them up and used it as a topping for yogurt!

Another recipe with blueberries that we love is my grandmother’s Miamoto Pie.

It’s super easy and yummy!


All you need is a baked pie crust. If you make your own, that’s great. If you don’t have time, then you can get a frozen one and follow the baking instructions on the box. Allow the crust to cool. You can even make it the day before and put it in the fridge.
For the filling, you will need two bricks of cream cheese. Whip that up until fluffy and then add in ¾ cup of icing sugar. Whip that some more and then add in 2 tsp. of vanilla.

Pour this mixture into the cool pie crust and top with 1 can of blueberry filling. I use the one pictured above.

You can eat it as is or you can put it in the freezer overnight and have a delicious frozen cheesecake pie (this is how I always eat it).


Another popular way to utilise blueberries is in muffins. Here’s Nicole’s go to recipe for Blueberry Muffins.

1 ¾ cup of flour
3 tsp. of baking powder
½ tsp. of salt
¼ tsp. of baking soda
¼ cup of butter or margarine
½ cup of granulated sugar
1 egg
¾ cup of milk
1 tsp. of vanilla
¼ tsp. of lemon juice
1 cup of fresh or frozen blueberries
1 Tbsp. of flour

In a large bowl mix flour, soda, powder, and salt. Then make a well in the center.

In a separate bowl, cream butter and the sugar. Beat in the egg until smooth and then mix in the milk, lemon juice, and vanilla and then pour into the well.

Stir to moisten. The batter will have lumps!

Stir in the blueberries and then fill greased muffin tins. Bake at 400 degrees for 20 minutes or until nicely browned.


One last recipe that Nicole came across and tried out is a Blueberry and Peach Crisp.


This needs:

For the filling...
2 cups of frozen peaches
4 cups of frozen blueberries
¼ cup of sugar
2 Tbsp. of cornstarch
¼ tsp. of salt
½ tsp. of cinnamon

For the topping...
¾ cup of brown sugar
½ cup of gluten free oat flour (you can use oats ground up in a food processor)
¾ cup of gluten free oats
¼ tsp. of salt
2 tbsp. of coconut oil, melted
¼ cup of butter

In one big bowl mix all of the filling ingredients together until everything is coated.

In a separate smaller bowl, mix the topping ingredients so that it looks like wet sand.

Pour the filling into a pie dish. Sprinkle the topping over it evenly.

Bake at 350 degrees for 50-60 minutes or until bubbling and the top is golden..

Cool for 10-15 minutes and then serve with vanilla ice cream.

Red Wine Chocolate Bundt Cake



Usually January is a recovery month after eating and drinking too much over the holidays but we believe that a treat is needed every once in a while and this one includes wine and chocolate. Many people claim that red wine and dark chocolate in moderation are good for you and this sweet treat includes both.

Today we are trying out a red wine and chocolate Bundt cake. The picture in the local grocery add caught my eye and I knew I had to try it out. So we did and here is how it went.

To make this cake you will need...

1 ½ cups of flour
1 ¼ cup of sugar
1/3 cup of unsweetened cocoa powder
1 tsp. baking soda
½ tsp. of baking powder
2 eggs
1 cup of dry red wine
½ cup of olive oil
1 tsp. of vanilla
½ cup of whipping cream
½ cup of dark or semisweet chocolate chips or finely chopped chocolate
1 tsp. of honey
Fresh berries of choice for topping

First off, preheat your oven to 350 degrees and grease a 9-10 inch bundt pan.


Whisk together the dry ingredients in your mixer’s bowl. Add in the eggs, olive oil, wine and vanilla. Mix well. Scrape down the sides of the bowl as needed. Turn your mixer on high and beat the batter for about 5 minutes until light and fluffy.





Pour into the greased pan and flatten the top.


Bake for 35 minutes or until a toothpick comes out clean.


Cool in the pan for 15 minutes. After cooling in the pan, invert on a plate until cooled completely.


While your cake is cooling, you can make the glaze. In a sauce pan over medium heat, bring  the cream to a simmer. Stir occasionally.

Pour the cream over the chocolate in a heat proof bowl. Let it stand for 1 minute.


Stir in the honey and the salt.

Allow it to cool and to thicken a bit. Then pour over the cooled cake.


Let the drizzle to harden for at least 10 minutes.


Serve with fresh fruit, berries are best. You can also dust with icing sugar if you like or whip up some cream to put on it as well. I really liked this cake a lot. It was moist and chocolatey and thought the flavour was nice; I didn’t really taste wine, but some others noticed the wine flavour more.
