Eggs, eggs, and more eggs!

Easter is coming up and so is the first day of Spring. When I think of both of these things I think of eggs. I think of Easter eggs whether they are chocolate or ones that you decorate and I think of Spring and all the babies that are hatching. So this week our blog is about eggs! They are a very healthy source of protein and are very nutritious for you; I like to boil a bunch of eggs and I pull one out whenever I need a healthy protein enriched snack. There is even a website called http://www.eggs.ca/ dedicated to eggs and facts about them and they also provide some yummy egg recipes. Eggs are in so many different things, desserts like custards and Crème Brule, breakfasts like French toast and omelettes, you can have them in your lunch as egg salad or on a Cobb salad, and even for dinner like in egg drop soup or egg foo young, and last but not least, you can drink it when you have Eggnog. Today we’re going to share with you some egg basics, easy recipes that you can create and a few recipes that we found that we’d like to try out.

Egg Basics

Egg in a Basket: This is a super easy snack or breakfast. All you need is bread, butter, and an egg. It’s perfect for when you have day old bread that you need to use up. You will need to warm up a frying pan. While it is warming, cut a 2 inch circle or square in the middle of a buttered piece of bread (remember to butter both sides). When the pan is warmed, place the bread in and then crack an egg in the middle cut out circle or square. When you think it is browned on the other side, flip the bread over and cook until browned. If you like a runny egg, then cook it for less time.


Egg Salad: Egg salad sandwiches are one of my most favourite lunches and sandwiches to eat. It is so easy to make too. You will need some bread, you can use regular sandwich bread, French loaf, buns, or even bagels. Butter the bread and put it aside. Hard boil two eggs (that’s for one person) and when they are cooled chop them up into tiny bits or chunks. Then what I usually do is put 1 heaping tablespoon of Mayonnaise into the eggs and stir it all up. If you prefer a drier eggs salad then put less Mayonnaise in and if you like it moist, then add more in. I like to season it with salt and pepper. You can also put in green onions or use a seasoning salt instead of regular salt and pepper. My dad even adds chopped up sweet pickles to his, it’s not for everyone though. Once it is all mixed up, spread on your bread and enjoy.


How to Hard Boil an Egg: This is how I boil eggs and it is really easy. You place in a pot, however many eggs that you would like to cook and then you cover them with water so they are completely covered. Then you put them on high heat and cover them until they come to a boil and then you uncover them and boil them for 3 minutes. After the 3 minutes is up, you take them off the burner and let them sit in the hot water with the lid on for 8 minutes. After the 8 minutes is, you can run them under cold water or drain the hot water out and replace it with cold water and allow the eggs to cool down that way. It is up to you. At the end of it all, you will have perfect hard boiled eggs.

Deviled Eggs: This is one of those easy basic egg recipes that is good to have in your recipe collection. They work well as appetizers and as a item to bring for a potluck.



Quiche: The name sounds so fancy, but you can make it as simple or a elaborate as you would like.
Eggs Benedict: I have always wanted to make eggs benedict, so I think I might give this recipe a try; it is such a yummy treat for breakfast, but a little intimidating when I think about making it.  
Eggnog: Now you don’t have to wait for Christmas to drink it, you can have it whenever you want. I never thought about making my own at home, but now I want to give it a try.
