Countdown to Mother's Day




It’s going to be all about mom for the next few weeks. Mother’s Day is just a few weeks away and we have some ideas here for you, starting today, that will make for a special Mother’s Day for mom this year. 

A perfect way to start the day for your mom would be a nice breakfast in bed and over the next few weeks we’ll share with you how to create a very special breakfast in bed for your mom, starting with a recipe today and some crafts in the next few posts.

Buttermilk Pancakes

Makes 12 - 5 inch pancakes
 
3 cups all-purpose flour
3 tbsp. white sugar
3 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp. salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted
 

Directions:

In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.

Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!

Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

Make a pot of your mom’s favourite tea or coffee, maybe some freshly squeezed orange juice, a few slices of bacon, and a fresh fruit salad that includes your mom’s favourite fruits, and you’ve got a perfect breakfast in bed that is sure to please your mom on Mother’s Day! 

Toppings 


If you want to spice things up a little and be more adventurous, try out these toppings (some can be used as fillings too) that you can treat mom with.

Toppings: Fresh Fruit, Cream, Sour Cream, Honey, Cinnamon, Lemon Curd, Chocolate, Caramel Sauce, Soft Cheese, Jam, Ice Cream, Brown Sugar, Yogurt, Mint, Dried Fruit, Frozen Yogurt, Fruit Compote, Different flavors of Syrup
