This week is right up our alley because
we’ve picked B.C. as our province of the week and that is where we are from. We are going to try out a well-known
British Columbia recipe, Bannock. It’s very simple to make so we’re going to
give it a try this week and see how it goes.
Ingredients:
6 tbsp. of baking
powder
3 ½ cups milk,
warmed
¼ cup vegetable
oil
Directions:
Mix together
flour, baking powder, milk and oil. Stir until dough comes together in a ball;
do not overmix. Shape into rough oval; place on baking sheet or oven-safe
casserole dish.
Serve warm
or cooled. We read that it’s “excellent with B.C. blackberry jam” but I’m sure
any type of berry jam would be delicious.

Another very B.C recipe is this Okanogan
Fruit Salad. It sounds delicious. You can have it as a refreshing dessert after
a meal or even as a special breakfast treat.

Ingredients:
½ honeydew
melon
2 apples,
sliced
2 pears,
sliced
2 peaches,
sliced
1 ½ cup pitted
cherries, halved
2 plums,
quartered
3 apricots,
quartered
2 tbsp. honey
¼ cup raw
apple juice
2 tsp fresh
tarragon, chopped
4 Canadian
Bocconcini, quartered
Directions:
Using a
melon baller, scoop out balls from melon.
In a large
bowl, mix fruit, honey, apple juice and tarragon.
Add
Bocconcini and toss gently.
Let macerate
a few minutes, then serve.
