Getting Ready for Mother's Day Part 2

This week as promised, we are continuing with our Mother’s Day theme for the blog. We have some yummy recipes sure to please mom for a Mother’s Day treat. We also have some of our favourite movies about moms.

Recipes

We've each chosen a recipe that our moms really like us to make for them. I have chosen Blueberry Bars. This is one of my mom's favourite things that I make, so I hope that you all enjoy it as well. I don’t make them enough though for my mom because they do take some time and I find it kinda hard to find blueberry jam at the grocery store but they are quite tasty.

Blueberry Bars

You will need:

2 ½ cups all-purpose flour
2/3 cup granulated sugar
½ teaspoon salt
2 ¼ cup butter, softened
½ cup oats
¼ cup light brown sugar
¾ blueberry jam
¾ fresh blueberries
1 tablespoon fresh lemon juice

Heat the oven to 375 degrees. Line a 13 by 9 inch pan with a foil sling. 

Whisk the flour, granulated sugar, and salt. Beat in 16 tablespoons of the butter at a low speed until the mix looks like wet sand.  Reserve 1 ¼ cup of the mixture for the topping.

Sprinkle the remaining mixture into the prepared pan and press into an even layer. Bake until the edges are brown about 18 minutes. 

Mix the remaining flour, oats, and brown sugar. Add the remaining 2 tablespoons of butter and pinch the mixture into clumps of streusel. In a small bowl, mash up the jam, blueberries, and lemon juice.

Spread the berry mixture evenly over the baked crust and then sprinkle with the streusel mix.

Bake until the filling is bubbling and the topping is dark brown, about 25 minutes.

Let the bars cool in the pan for about 2 hours. Remove the bars from the pan using the foil. Cut into squares and serve.

The recipe that I have chosen is for Granola Stacks. It's really simple to make and tastes delicious. My mom really likes them because she enjoys the combination of textures...the smooth chocolate, mixed with the crunchy granola, and chewy raisins! Hopefully you'll like them just as much.

Granola Stacks

You will need:

1 cup Semisweet chocolate chips
1 cup Butterscotch chips
1¼ cups Granola cereal
¼ cup raisins

In a medium saucepan melt chocolate and butterscotch chips over low heat. Remove from heat. Stir in cereal and raisins.

Drop by spoonfuls onto waxed paper (or parchment).

Let harden in the refrigerator.

Movies are a favourite of mine as well all know. We have come up with lists of favourite movies for occasions before, so this week we've come up with a list of movies about mom in honour of Mother’s Day on Sunday.
